Here’s a super summer side dish that’s super easy! Just the kind I love! Because it’s a recipe from a chopped salad kit – a Dole Chopped Avocado Ranch Kit. Yummy, easy and delicious on it’s own. But what if you want a fast main dish salad? Loads of crispy bacon and my favorite Honeycrisp apples just made a 5 minute meal.

Hardly worth writing as a post because it’s so easy a sleeping baby could make it (maybe not quite, Davidson humor here), but just in case you needed a quick and easy dinner rescue, here it is.
Sometimes you’re just too hot to cook. And as your tummy rubbles, you need a fast solution when there’s nothing in the house. So head to the store for an Avocado Ranch Salad Kit, less than a pound of bacon and one Honeycrisp apple. It’s dinner for four. It’ll be five servings if you use it as a side.
Someone squeemish about avocados? No worries here. As long as the squeem is from preference rather than allergies. The avocados are blended into the ranch dressing and aren’t even discernable. You could even swap your own ranch dressing if you prefer. Just don’t mention the avocados and your kids will be fine.
Sad there aren’t more avocados? If you feel cheated by the name, pick up an avocado while you’re out at the store.

Bacon Apple Chopped Kit Salad
This yummy cabbage mix is topped with crisp bacon and crunchy-sweet Honeycrisp apples. Starting with a chopped salad kit makes your grocery list easier and your chopping time shorter.
Ingredients
- ½ – ¾ lb thick sliced bacon, cooked, cooled and crumbled
- ½ – 1 Honeycrisp apple chopped
- 1 Dole Avocado Ranch Chopped Kit
Instructions
- In a medium-size bowl, toss all salad kit ingredients together. Top with bacon and apple and toss again.
- Serve immediately.
