Broccoli Cheese Soup

Creamy, delicious Broccoli Cheese Soup is easier than you think! I’ve adapted this recipe to use frozen, chopped broccoli so it quickly comes together in less than thirty minutes. If you enjoy a warm bowl of broccoli cheese soup, this one has all the creaminess of real milk and cream cheese, as well as the taste of real cheddar!

Finding Frozen Chopped Broccoli

I like a fine, chopped broccoli rather than broccoli florets in this recipe. Although the florets would still work, the broccoli cheese soup tradionally uses a more finely chopped vegetable. Although chopped broccoli is not as readily available as it used to be, I can usually still find a package that is 10 or 12 ounces. This package from HyVee is perfect. If your store doesn’t carry frozen chopped broccoli, steamables work well too. And I have also been known to use florets by finely chopping them myself. Even though they were frozen.

The Cheesy Sauce

While the onions and broccoli cook together in one pan, the other ingredients (minus the cheddar) are combined to make the creamy cheese sauce. You can mix them in stages like a chef if that makes you feel better. Melt the butter, blend the flour, and finally add the milk and cubed cream cheese. But if you want the speedy version, and you’re willing to constantly stir as the sauce cooks, this amazing soup will work out perfectly to just add all those sauce ingredients at once. Just chunk the butter and cream cheese first. After all this is melted and thickened, add the cheddar cheese.

The Final Step

Once the broccoli is cooked and the sauce is thickened, simply combine the two! The broccoli liquid thins the thick sauce into the perfect creamy consistency.

Broccoli Cheese Soup

Quickly turn a bag of frozen chopped broccoli into a creamy, cheesy, satisfying soup.


  • 1 ½ cups water
  • 2 Tbsp. chicken bouillon
  • 1 12oz pkg. frozen chopped broccoli (steamable also works fine)
  • 1/3 cup finely chopped onion
  • ½ cup (1 stick) butter
  • 5 Tbsp. flour
  • 2 cups milk
  • 1 8oz pkg. cream cheese, softened
  • 1 cup shredded Cheddar cheese


  1. Bring water, bouillon, broccoli, and onion to a boil in a large saucepan. Reduce heat and cook until tender, 3-5 minutes.
  2. Meanwhile in another saucepan, melt butter. Stir in flour. Then blend in milk and cream cheese. Cook over medium heat, stirring constantly, until mixture is melted, smooth, thickened and bubbly. Stir in cheddar until completely melted.
  3. Stir broccoli mixture into cheese mixture and blend completely.
