This great fudge is surprisingly easy to make! The secret? It’s a microwave recipe.
This is a cozy, booklover’s kind of fudge. A little beyond basic chocolate, but not so complex that you have to be a foodie to enjoy it. It’s as homey and comfortable as coffee, chocolate and pecans. A nice trio that invites you to sit and enjoy.
Sometimes I want a smooth, uncomplicated fudge. I have a different recipe I use for that. But when I want something smart and sophisticated without being too stuck up, I’m drawn in by the tasty, toastiness of these pecans and the same warm, dark chocolate and coffee flavors that make women happy!

I’ve been making this fudge for decades because it’s my favorite microwave fudge. It’s a magazine clipping that rests in my recipe box and comes out at Christmas and New Year’s. It takes no time at all to make, but be sure to give it time to chill. After that it stores well at room temperature in an airtight container.
My only note to the original recipe is to watch the pecans carefully as you toast them. Stir them after each minute in the microwave. My pecans tend to burn if I microwave for the whole 4 minutes that the recipe suggests. But microwaves are different, and it could just be mine runs a little hot.

Coffee Shop Fudge
This quick, gourmet fudge is flavored with coffee and toasted pecans. Though it tastes fancy, it's really a simple microwave recipe.
Ingredients
- 1 cup chopped pecans or walnuts
- 18oz (3 cups) semisweet chocolate chips
- 1 14oz can sweetened condensed milk
- 2 Tbsp. strong brewed coffee*
- 1 tsp. ground cinnamon
- 1/8 tsp. salt
- 1 tsp. vanilla extract
Instructions
- Line a 8 or 9-inch square pan with
aluminum foil so that sides overhang the edge. Butter the foil and
set aside. - Place pecans in a microwave-safe pie
plate. Microwave, uncovered on high for 3-4 minutes, stirring after
each minute. Set aside. - In a medium glass bowl, combine
chocolate chips, milk, coffee, cinnamon and salt. Microwave on high
for 1 ½ minutes. Stir until smooth and melted. Stir in vanilla and
pecans. Immediately spread into prepared pan. Cover and refrigerate a
few hours until firm. - Lift fudge out of pan with foil edges.
Cut into squares and store at room temperature.

*If I don't have strong brewed coffee on hand, I quickly make a strong 1/2 cup of instant coffee.

What do look for in a fudge? This one has great, creamy-smooth texture, and a little crunch of nuts. The taste is a little darker since you use semi-sweet chocolate chips, the nuts are toasty warm, and the hint of coffee reminds me of mocha.
