Cucumber Radish Salad

I think I’ve always loved cucumbers, but more recently I’ve fallen in love with radishes. Quite honestly, I didn’t like them at all when I was younger. But now I’ve discovered that their crisp, peppery taste is sometimes a pleasant addition.

The inspiration for this pairing was just the similarities in vegetable shape. How cute they both are with their chubby, circular little slices!

Both are crisp but in different ways. You have the initial crisp then soft of the cucumber compared to the crisp crunch of the radish. The radish and the cucumber are nice complements to one another, mild flavors that stand well alone or together and need little more adornment than vinegar and dill.

Cucumber Radish Salad

Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients

  • 1 mediumcucumber
  • 6-8 radishes
  • 1/4-1/3 cup diced red onion
  • 3 Tbsp. olive oil or salad oil
  • 6 Tbsp. white vinegar
  • 1 tsp. salt
  • 1/2 tsp. dried dill weed
  • 1/4 tsp. garlic powder
  • 1/2 tsp. sugar

Instructions

Peel and thinly slice cucumber. Remove tops and bottoms of radishes and thinly slice. Toss cucumber, radishes and remaining ingredients together in a medium bowl.

Serve immediately or chill up to one hour before serving.
