Easy Taco Skillet

Easy Taco Skillet is even easier than regular tacos! It’s a one pan meal you can eat with a fork. This recipe is guaranteed to satisy your hungry family!

Easy Taco Skillet is one of the earliest recipes in my collection. Mom had an electric wok in the 70’s, and this quick and easy dinner came from the pages of our first (and only) wok cookbook.

I know, right? Not what you expected to find in a wok cookbook. Fortunately, the recipe remained with us much longer than the electric wok, and we have been happily eating Easy Taco Skillet for decades since.

The Making of a Masterpiece

One thing we loved about this recipe growing up was the corn chips. Corn chips were a luxury that we seldom enjoyed so that was enough to get us excited about dinner.

Ground beef is an easy meat for even youngsters to prepare so I was making dinner for the family before my teen years. For this recipe you simply cook the ground beef with a little onion.

Now as a child, the stewed tomatoes were less than appealing to me. For years I’ve made Easy Taco Skillet substituting diced tomatoes, but more recently I’ve returned to the stewed tomatoes because the flavor reminds me of my childhood. If you decide to use the more flavorful stewed tomatoes, you can blend them first or dice them with scissors right in the pan as you’re cooking. Your young eaters may prefer having these cut up or pureed.

Cheese. What’s not to love?

Tacos or Taco Salad?

Unlike tacos, you serve Easy Taco Skillet over a bed of lettuce, no taco shells required. And depending on how much lettuce you’re using this could easily become a taco salad! For fast and easy, you can use packaged, shredded iceburg lettuce. For a main dish taco salad, serve Easy Taco Skillet over torn romaine.

Delicious, taco-flavored dinner that uses corn chips instead of taco shells. Serve it over a bed of lettuce to make a taco salad.


  • 1lb. lean ground beef
  • ¼ cup chopped onion
  • 2Tbsp. chili powder
  • 1 cup corn, canned or frozen
  • 1 16oz can stewed tomatoes or diced
  • ½ tsp. dried oregano
  • ¼ tsp. salt
  • 1/8 tsp. pepper
  • 1 (2.25oz) can sliced ripe black olives, drained
  • 1 cup shredded Cheddar cheese
  • 1 (9 ½ oz) pkg. corn chips (measure half a bag)
  • 1 head of romaine, chopped
  • Avocado and cilantro for garnish (optional)


  1. In a large skillet, cook beef and onion over medium high heat. Drain excess fat.
  2. Stir in spices, corn and tomatoes. Bring to a boil. Lower heat;
    cover and simmer about 10 minutes.
  3. Remove from heat. Stir in cheese, olives, and corn chips. Serve over lettuce.
