Fudgy Mug Cake

This recipe is for anyone out there who needs some chocolate brownie or cake for one! There’s nothing like a gooey, warm chocolate dessert sometimes, and if you don’t want to bake an entire cake, you’re in luck! No cake pan necessary! Or bowl, even. Just measure these ingredients, microwave for one minute, then sit back with your mug and spoon and savor every bite!

Landing on the perfect chocolate mug cake

This super chocolatey, super rich, dark chocolate Fudgy Mug Cake came to be after my efforts of combining mug cake recipes. Originally, I had found a delicious mug cake online made with butter, but it was honestly, too rich for me. Other recipes I had tried only offered a light chocolate flavor and a cake that was a little dry. I wanted chocolatey and decadent. Like my Deep Dark Chocolate Cake. Only without making a 9×13″ cake.

After lots of trial and error, my test subjects agreed that we had found a sweet landing place! Fudgy Mug Cake is often requested at the Davidson house, and was the dessert choice for Valentine’s Day this year.

One thing I like about this mug cake is that it offers a glaze that acts like the equivilent of a chocolate frosting. The top of the cooked cake has this soft chocolate glaze and then you reach the moist cake below. Oh my, yummy!

Baking in mugs

And although it’s the perfect option for alone time, we’ve been known to make this at our house for the three of us. The single recipe makes a very large serving. You can split it in two for very small servings (baked for slightly less time), or we like to stir together a double batch in a separate bowl and divide it between three mugs!

It should be noted that although this makes a large single serving Fudgy Mug Cake, it won’t actually be as large as the pictures show. For the pictures, I over-filled the mugs so that the cake wouldn’t be hiding inside the mug where it would be hard to photograph.

Usually, the batter fills a mug about one-half to three-fourths full. Then the cake will rise while it bakes. Watch it closely so that it doesn’t overflow. I don’t have a problem with this unless my mug is smaller than average.

Fudgy Mug Cake

Yield: 1 large serving
Prep Time: 5 minutes
Cook Time: 1 minute
Total Time: 6 minutes

Stir, bake, and serve, all in your mug! This decadent, fudgy, dark chocolate mug cake is ready in about 1 minute.

Ingredients

  • ¼ cup flour
  • 3 Tbsp. cocoa
  • ¼ tsp. baking powder
  • ¼ cup brown sugar
  • 1/8 tsp. salt
  • ½ tsp. vanilla
  • 2 Tbsp. vegetable oil
  • ¼ cup milk
  • 1/3 cup chocolate chips

Instructions

  1. Measure all ingredients into a medium or large mug.* Stir together completely being sure to mix into all the bottom edge of the mug.
  2. Microwave for one minute. Insert spoon to test doneness. You should have a glaze on top but begin to touch spongey cake with the bottom of your spoon. Some microwaves require up to 20 additional seconds.

*Ingredients can be stirred together in a small bowl and then added to the mug.
