Spiced Apple Cake

Time for fall and all its wonderful flavors! Like the cinnamon, nutmeg and apples in this Spiced Apple Cake! It’s so easy to make and fun to top with powdered sugar, whipped cream, maple glaze, cream cheese frosting…basically choose your own delicious topping. Or simply enjoy it plain.

We have an apple orchard nearby and used to visit often when the kids were little. We have great pictures and great memories from the place. And we always came home with more apples than we knew what to do with! It doesn’t take long to fill up your apple baskets when the whole family is in the orchard.

This fall why not save back two or three apples for this lovely Spiced Apple Cake? This is another family favorite that I’ve been making for decades. It was the birthday cake for my oldest daughter on her first birthday in 1996! I just frosted and decorated it, like I would any other birthday cake. More recently, I’ve discovered that caramel ice cream topping drizzles nicely over the apple cake! You can warm up the caramel sauce and drizzle it over the warm cake. Or you can drizzle cooled sauce over a dollup of whipped cream.

Dice three cups of apple and you will have some nice chunky apple texture in your full 9×13″ sheet cake.

It’s a great snack cake if you want to leave it unfrosted.

Spiced Apple Cake

Yield: 12-15 servings
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes

This wonderful apple cake is moist and delicious and spiced with cinnamon and nutmeg.

Ingredients

  • 1 ½ cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • ½ tsp. salt
  • 1 ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 3 cups chopped apples

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat together sugar, oil and eggs. Blend in dry ingredients. Stir in chopped apples.
  3. Pour cake batter into a greased 9x13” baking pan and smooth to even top. Bake for 35-45 minutes until a toothpick inserted near the center comes out clean.
  4. Serve frosted or plain, or topped with whipped cream and caramel sauce.
