White Chicken Chili is one of my son’s favorite soup recipes, and definitely his favorite chili. This recipe is loaded with protein and can conviently be made in a slow cooker. Bonus, it can be cooked on a high or low setting which means I can start it in the morning before work, or in the early afternoon when I’m wondering what to make for dinner! If I have errands or appointments in the late afternoon, I love to have a crock pot meal simmering at home so that dinner is ready when I get home hungry. The flavor in this soup is tremendous! The delicious chicken broth seasoned with cumin and green chilies makes you warm all over without creating a fire in your mouth. The white beans are tasty with the white chicken. Definitely a comfort food.
As long as you have some prepared chicken, the soup goes together quite quickly with canned goods from the pantry. Just chop a few onions and you’re good to go. It’s a one step slow cooker white chili recipe without any stove top cooking to start.
I always love well-seasoned food, and cumin is one of my favorite spices. So warm and yummy.
And beyond the basic broth, this recipe also has melted Monterey Jack cheese. You can add this right before serving and it stirs right in. If you wanted to, you could also skip the cheese for a lighter, brothier soup.

White Chicken Chili
This tasty meal is packed with protein and easy to assemble. Can be cooked in either 4 hours or 8 hours in your slow cooker.
Ingredients
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 1/4 tsp. cayenne pepper
- 3 15oz cans Great Northern beans, drained and rinsed
- 1-2 4oz cans diced green chili peppers
- 4 cups chicken broth or low-sodium chicken broth
- 3 cups chopped cooked chicken
- 8oz shredded Monterey Jack cheese
Instructions
- Place all ingredients except shredded cheese in a 3 1/2-6 quart slow cooker. Stir to combine.
- Cover and cook on low heat setting for 7-8 hours or on high heat setting for 3 1/2-4 hours. Stir in the cheese until melted.
- Cool slightly and serve.
